Chia Seed Fruit Salad

Ingredients

- Chia seed - 4 tablespoon
- Chilli padis -10 pieces
- Banana - 1 piece
- Strawberry - 1/2 cup
- Raw almond - 1/4 cup
- Blueberries - 1/4 cup


Preparation
 

01. Chia seed preparation: Add chia seed into coconut water. Stir well, soak for 2 to 3 hours or overnight. 

02. Tossing: Top it onto the fruits and serve.

Zucchinni Noodles With Pesto

Ingredients

- Medium zucchini, ends trimmed - 2 pieces
- Fresh basil leaves - 4 cups
- Garlic - 4 cloves
- Pine nuts (or Almond, Walnut, Pumpkin seed) - 1/2 cup
- Extra-virgin olive oil - 1/4 cup
- Fresh lemon juice - 1/2 cup
- Salt - 1/2 teaspoon
- Freshly ground black pepper - 1/2 teaspoon
- Cherry tomatoes - 5 pieces


Preparation
 
01. Zucchini Noodles: Use a spiralizer / peeler to make the zucchini into noodles. Set aside. If water starts to appear, put it into a cloth and squeeze out the water.

02. Basil Sauce: Combine the basil, pine nuts and garlic in a food processor and pulse until coarsely chopped. Slowly add the olive oil in a constant stream while the food processor is on. Stop the machine and scrape down the sides of the food processor with a rubber spatula. Add the lemon juice and pulse until blended. Season with salt and pepper. 

03. Tossing: Combine the zucchini noodles and pesto. Toss until zucchini noodles are well coated. Top with tomatoes, if using. Serve at room temperature or chilled. 

04. Cooking: If you would like to cook the zucchini noodles, you may. Just add the zucchini pesto to a skillet and saute them up over medium heat. It only takes a few minutes. 

05. Note: Fresh zucchini noodles should be consumed within 3 days and pesto sauce within 7 days in the fridge since there are no preservatives added. 

Braised Duck with Ginger & Bean Paste

Ingredients

- Duck - 1 whole that's chopped up
- Young ginger - 2 big pieces
- Sugar - 2 heaps tablespoons
- Oyster sauce
- Light soy sauce - 3 tablespoons
- Dark soy sauce - 3 tablespoons



Preparation
 
01. Ginger: Scrap young ginger and cut into thin slices.

02. Beans: Using 1.5 spoons of beans, slice and mix them up into smaller bits. 


03. Duck: Place chopped duck slices in water to boil. After the dung is out, pour out hot water. Wash dung away from duck under running water. Slice duck if it's still too big.





04. Frying: Fry the sliced young ginger until golden brown and fragrant. Continue to stir fry until an uniform colour of sliced young ginger is achieved. Add mixed bean paste and continue to stir fry with sliced young ginger. Add sliced duck into the mixed paste and continue to stir fry. 






05. Frying: Add approximately 3 tablespoons of light oyster sauce and stir fry. Continue to add approximately 3 tablespoons of dark oyster sauce and stir fry. Continue to add approximately 2 heaps tablespoons of sugar and stir fry. Add enough normal room temperature water into the work to cover the sliced duck and allow it to simmer for 1.5 hours. Stewed duck is ready to be served!

Patrick's Chill Sauce for Steamboat

Ingredients

- Parsley leaves - 1 bunch
- Chilli Padi - 10 pieces
- Dancing Chef Chilli Sauce - 5 bottles




Preparation
 
01. Parsley leaves & chilli padi: Chopped up parsley leaves finely and chilli padi into small pieces.

02. Mixing: Pour in dancing chef chill suace, add finely chopped parsely leaves and chilli padi into the sauce. Mix well and it is ready to be served!





Patrick's Pork Popcorns

- Serves: 10 adults



Ingredients

- Pork with meat and some fat - 3 long strips
- Sugar - 6 tablespoon heaps, 1 strip is 1.5 heaps of sugar
- Oyster sauce
- Black sauce
- Light sauce
- Pepper
- Plain Flour - 1 kg





Preparation
 
01. Pork: Slice pork strip in smaller cubes. 


02. Marinating: Marinate pork with sugar and leave it in the fridge 1 to 1.5 hour.

 


03. More Marinating: Take marinated pork from the fridge and put in an estimated amount of oyster sauce. Add a pinch of pepper, a tinch of light sauce and use mix well. Then put it back in the fridge to marinate for another 2 hours.



04. Frying: Take pork out after 2 hours, mix an egg into the marinated pork. Prepare a tray of plain flour, dip in mariniated pork in plain flour, make sure that marinated pork is completed covered in plain flour. Dusk off any excess flour and fry in medium heat oil. Put 10 to 12 pieces of marinated pork in a go. Take out pork when golden brown, let it rest and it is ready to be served!
