- Dark greens (kale / cabbages) - 1 packet
- Spaghetti - 150 grams
- Garlic - 4 cloves
- Parmesan - 1 small block
- Ricotta cheese - 1 small block
- Salt - 1 pinch
- Pepper - 1 pinch
- Oliver Oil - 4 tablespoons
Preparation
01. Prepare a pan of salted water. Once water is boiled, add in spaghetti. Take out and drain spaghetti once it is soft.
02. Smash 4 cloves of garlic and put into the pot of boiling pasta water.
03. Tear the leaves off the stems. Using only the leaves on the green, par boil them, by putting them into the pot of boiling pasta water for about 5 minutes.
04. Take out the par boiled greens leaves and garlic from the pot and place them into a processor. Add a pinch of salt, a pinch of pepper, some drizzle of olive oil, grated parmesan, and a little pasta water into the processor. Blend all the ingredients together until it is very smooth.
05. Add the blended green sauce with the spaghetti into a new pan and toss with heat. Add some pasta water if more sauce is preferred. Top off with pieces of ricotta and grated parmesan. Drizzle with some extra virgin olive oil if required.
